Frozen Silver Whitebait Small Fish

Whitebait, slender and almost translucent, ivory-white along the body with a fine line of silver down each flank and a small dark eye. They are whole and unbroken, uniform in size, with no ice glaze hiding broken pieces underneath.

The flesh is soft and delicate with a clean, faintly sweet taste and no strong fishiness at all. They need very little: dust them in flour and fry until crisp and eat with salt and pepper, cook them into an omelette, drop them into soup at the last minute, or pan-fry with scallion and ginger as shown. They cook in under two minutes, so watch them.

Net weight 500g. Keep frozen at -18°C or below. Avoid repeated thawing. Cook thoroughly before eating.
