Fresh-Frozen Mantis Shrimp
Mantis shrimp, split lengthwise down the back so the inside is laid open. The flesh is a pearly white, and running the full length of the body is a thick band of deep orange roe, firm and densely packed — the reason this one is worth paying for.
They are frozen after splitting, so the roe stays intact and the flesh keeps its springy, lobster-like bite. Steam them for four or five minutes and eat with ginger and vinegar, salt-and-pepper fry them, or grill the halves shell-side down and finish with a squeeze of lime. Do not overcook — the roe turns grainy.
