Frozen Large Head-On Jumbo Prawns

Large head-on prawns, big enough that four fill a plate. The shells are translucent white shading to soft pink and orange along the back, banded and glossy, with long antennae and the head and roe still attached — the parts that carry most of the sweetness.

They are firm and springy to the touch, frozen on the boat so the flesh holds its snap. Because the heads are on, they are at their best cooked hard and fast: sear them in a hot pan, grill them over coals, or poach them briefly and serve cold. Keep the heads for stock — they give a deep, sweet broth.

Net weight 1000g. Keep frozen at -18°C or below. Avoid repeated thawing. Cook thoroughly before eating.
