Frozen Whole Sea Stars Seafood

Whole sea stars, five-armed and heavy in the hand, their upper surface a warm orange stippled with fine raised spines. One is shown broken open to reveal the dense olive-green roe packed along each arm.

They arrive cleaned and frozen straight after landing, with the arms intact and the body firm rather than limp. Steam them briefly and dress with soy and ginger, drop them into a seafood hotpot, or halve them and grill the roe side until it just sets. The roe is the part worth having — rich, faintly sweet and unlike anything else from the shore.

Net weight 500g. Keep frozen at -18°C or below. Avoid repeated thawing. Cook thoroughly before eating.
