Frozen Whole Yellow Croaker Fish

Whole yellow croaker, its flanks washed in gold that deepens along the back into a faint olive, with a bright silver belly and the fine, close scales the species is known for. The head, fins and tail are all still on, and the eyes are clear.

One fish is opened down the back to show the flesh: thick, snowy white and set in clean firm flakes with very few small bones. The flavour is delicate and gently sweet rather than oily, which is why croaker is so often steamed whole with ginger and scallion, or pan-fried until the skin crisps. Braise it, or cook it in soup with tofu.

Net weight 1000g. Keep frozen at -18°C or below. Avoid repeated thawing. Cook thoroughly before eating.
